Pepper, Black Whole

The world’s most important spice. Black pepper is picked off the pepper vine while green and left in heaps to ferment. They are then spread out to dry in full sunlight for 24 hours until they shrivel into a dark brown, almost black. Used in pickling, roasts, and marinades.
